We enjoy the hamburgers, pizzas and ramen, but we can eat spicy papaya salad every day. At Somtum Dontree on Theparak Road in Samut Prakan, Dontree Srisopha whips up authentically strong and fiery som tum, but she's happy to modify the fireworks on request. The Nakhon Phanom native claims the pla ra (fermented fish) from her home province is the best for the tangy salad, and she's probably right. Her eatery is always crowded with people seeking their daily dose of the national dish, and there are almost 100 versions on the menu! While the classic version - papaya with fermented fish and salted crab - is the most popular, sweet-and-salty delights such as spicy-sweet-corn-and-salted-egg salad and mixed fruits are also top sellers. The prices range from Bt40 to Bt55. Making som tum is fairly easy, but making it truly tasty requires experience and exceptional ingredients. Dontree's pla ra is made from Mekong River fish and fermented for about three years. For som tum, she boils it with mulberry leaves to get a well-balanced taste and pleasant odour. And she uses only unripe khaek dum papaya from Damnoen Saduak in Ratchaburi because of its crispy flesh. The crabs come from Trat, but Dontree ferments them herself to ensure the taste isn't too strong. She uses real dried shrimps, not the tiny freshwater ones that are dyed red for retail. The lime juice is "home squeezed", not the artificial from a bottle. Small hot chillies are ideal for the strong taste desired. Speaking of ideal, the Bt40 spicy bamboo shoot salad and Bt200 deep-fried prawn with mixed salad are highly recommended. And order your som tum with fried chicken with fish sauce (Bt80 to Bt160) and try the deep-fried tubtim fish with fish sauce for Bt180 - it's really tender and has no fishy smell. All the food is fried in soybean oil, not palm oil. Somtum Dontree is also a great source of Isaan and Thai-Chinese favourites, which you can buy in bulk for buffets or banquets.
